1cupblueberries (fresh or frozen)
3/4cupcoconut milk or cream (full-fat for creaminess)
2tablespoonscollagen peptides or unflavoured protein powder
2tablespoonsgelatin powder
2-3tablespoonsmaple syrup or honey (adjust to taste)
1/2teaspoonvanilla extract
Optional: 1 teaspoon lemon juice for brightness
Instructions
Plant-based option: Replace gelatin with agar agar powder (follow packet instructions for setting).Add blue berries, coconut milk, maple syrup, vanilla extract and lemon juice (if using) to a blender. Blend until smooth.Pour the mixture into a small saucepan and heat on low until warm but not boiling. This helps activate the gelatin without damaging the ingredients.Remove from heat and sprinkle gelatin slowly over the warm mixture while whisking continuously to prevent clumping.
