Goji Berry Chocolate Bark

Chocolate Bark is the easiest healthy snack you will ever whip up. All you need are 6-8 simple (and completely customizable!) ingredients – coconut oil, dried fruit, coconut flakes, and any type of nuts. This homemade treat makes the perfect gift!


¼ cup cashews, roughly chopped

½ cup almonds, roughly chopped

½ cup coconut oil

2 tablespoons honey

½ cup cacao (or cocoa) powder

¼ cup goji berries

½ cup coconut large flakes/chips

1 teaspoon pure vanilla extract


Place the coconut oil, honey, vanilla extract and cacao powder in a small saucepan over low heat and whisk to combine.

Pour the mixture in an 8×8 inch baking pan lined with parchment paper.

Sprinkle on the goji berries, almonds, cashews and coconut flakes.

Freeze for 1 hour or until set. Cut into pieces and serve.
