It’s no secret I have a major weakness for frozen desserts. Ice cream, frozen yogurt treats, milkshakes you name it, I love it! But my favorite frozen treat of all time? FUDGE POPS. You may know them as frozen fudge bars, fudge popsicles, or fudge ice cream pops.

These gorgeous protein fudge pops are a few levels up from the normal ones as they are protein-rich which is much more suited to a modern healthy eating plan with balanced macro-nutrient (protein, fat, carbs). Frozen Yogurt Protein Fudge Pops

Equipment

  • 6 Popsicle sticks

Ingredients

  • 1 cup thick Greek-style yogurt,plain or vanilla
  • 1 cup dates, soaked 30 minutes and drained
  • 1/4 cup almond, or oat flour (almonds or oats blended to a flour)
  • 1/4 cup protein or collagen powder, vanilla or chocolate
  • 1/3 cup almond (or any other nut or seed) butter
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 1/4 cups chocolate chips
  • 2 tablespoons coconut oil

Instructions

  • Add dates to a food processor and process until broken down into a paste. Add yogurt, almond flour, protein powder, almond butter, cocoa powder and vanilla extract and pulse until well combined.
    With slightly wet hands, divide the mixture into 6 portions and shape into round mounds and insert a popsicle stick into each one.
    Place the pops on a parchment-lined tray and freeze for 2-3 hours until firm.

Chocolate Coating

  • Place chocolate chips and coconut oil in tall glass (easier to dunk the pops in to coat) and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the pops and after checking they are firm and set, hold each one by the stick and dip into the melted chocolate until fully coated, then place back on the parchment lined tray.
    Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl.
    Place back in the fridge for chocolate to set about 10minutes.
    Once chocolate is set and crisp, enjoy your Protein Pops.
