Easy Coffee Protein Ice Cream

Ingredients

  • 1 13.5 oz can full-fat coconut milk or cream (lite is watered down and will be icy)
  • 1 cup dates, soaked 30 minutes and drained
  • 1/4 cup protein or collagen peptides powder
  • 1 tablespoon nut or seed butter of choice
  • 1 tablespoon instant coffee powder
  • 1 teaspoon vanilla extract

Add Ins Or Optional Toppings

  • Chopped nuts
  • Fresh, dried or freeze-dried fruit
  • Drizzle of nut butter
  • Shredded coconut
  • Chocolate chips

Instructions

  • In a blender, combine the coconut milk or cream, protein powder, nut butter, coffee and vanilla and blend until completely smooth.
    Add the dates last and pulse a few times to keep lots of chunks rather than blending smooth. These little pops of caramel sweetness add a wonderful touch.
    Taste test and add more coffee powder or vanilla extract if you think it needs it.
    Pour the mixture into a container and freeze, stirring every 30 minutes for 3-4 hours to break up ice crystals.
    Freeze until solid, then let sit at room temperature for a few minutes before scooping.
