These no bake snack bars are one of the best date recipes you can make! Sweet, chewy, wholesome bars chock full of good stuff and no added sugars.

I started making these to replace my favorite store bought nut bars because they can get REALLY expensive at the store if you are eating them regularly! I love to eat these bars mid to late afternoon when I just really want to snack on something. I typically workout in the early morning so come the afternoon I am flagging a bit and these bars are a great boost of energy to get me through to dinner time. BUT they would also make a delicious dessert!

My pantry is always filled with different nuts and nut butters. When I get to the end of the bags, I love making a homemade trail mix or some type of fruit and nut bar and using up the leftovers is a great way to clear out my pantry.

These easy-to-make bars are packed with omega-3 fats, protein and even some fiber. They are a nourishing treat to stock your fridge or freezer with, quick and easy to make using simple ingredients.

They are easily adaptable and you can customize them to include more protein, different kinds of nuts, seeds, dried fruit or adding spices like cinnamon, cardamom or ginger powder. You can even roll them into balls to make energy bites!

I love to use dates to naturally sweeten my snack balls, no-bake bars, or if I need a sweetener in a cookie or frosting. They are little morsels of natural sugar and a great alternative to refined sugars. You don’t need many dates to make something sweet!

This recipe is a super healthy treat! Packed with vital nutrients these bars have a good amount of protein and healthy fats to keep you satiated and provide lots of healthy energy. If you know you have a busy week coming up, make a batch of these nutritious, energy-boosting bars for when you are rushing out the door without time for a proper breakfast.

They happily pass as a quick breakfast, or a perfect snack. I love to pack these bars for road trips and flights, and moms make these bars regularly for their kids. They are a big hit with all ages.

This recipe is great for a party or family gathering too. We all love “bar” style desserts for hosting in general, just prep and slice in advance for the easiest serving! And they look a million dollars dolled up with a chocolate topping with a peanut butter swirl. Whatever occasion you make them for, I promise you they will get gobbled up.

Making your own nut and fruit bars means you get to choose which nuts you would like to use and which dried fruit. So the recipe is incredibly customizable. Each time I make these bars I end up with a completely different version. But that’s ok as they are all fantastic. There has NEVER been a version I don’t like. The idea is to use what you have. Perfect for clearing out the pantry.

Date & Nut Snack Bars (No Bake)

Ingredients

  • 1 1/2 cups dates, pitted, soaked 30 minutes and drained
  • 1 1/2 cups nuts (I used a mix of cashews and almonds but any mix is fine!)
  • 1/2 cup peanut (or any nut or seed) butter

Chocolate Topping

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • Optional drizzle: 2 tablespoons of peanut butter + ½ teaspoon of coconut oil

Instructions

  • Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Place the nuts in a food processor and process until broken down and crumbly.
    Add the dates and peanut butter and continue to process until mixture starts to come together in a sticky dough.
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your nut and date bars.
    Scoop out mixture and spread evenly into the lined pan.
    Place in fridge while you melt the chocolate topping.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Pour the melted chocolate over the date mixture and spread out evenly.
    If using the peanut butter drizzle, microwave the peanut butter + coconut oil until melted and stir until combined, then drizzle it over the chocolate topping.
    Or use a small sauce pan over a low heat on the stove top to melt those ingredients together.
    I used a tooth pick to kind of swirl the drizzle in but that is optional.
    Place in the fridge to chill for about 30 minutes or until the chocolate is fully hardened. Slice into 16 squares and keep stored in the fridge for up to 2 weeks, or freeze for up to 2 months.
