Dark Chocolate Coconut Protein Bars (No Bake & Healthy)

Spread the love

If you love the rich combination of dark chocolate and coconut, these Dark Chocolate Coconut Protein Bars are about to earn a permanent place in your fridge or freezer. They are chewy, lightly sweet, and deeply chocolatey – yet made with nourishing ingredients that support a balanced, feel-good lifestyle. Best of all, they are completely no-bake, so you can whip them up in minutes without ever turning on the oven.

These bars are inspired by classic chocolate-coconut treats but reimagined in a healthier, protein-packed form. The base combines oats and shredded coconut for texture, natural nut butter for richness, and a scoop of protein powder to keep you feeling satisfied. A touch of honey or maple syrup adds just enough sweetness without overpowering the dark chocolate flavour.

What makes these bars especially appealing is their balance. You get carbohydrates from oats for energy, healthy fats from coconut and nut butter for staying power, and protein to help support muscle recovery and steady blood sugar. That combination makes them ideal for afternoon snacks, post-workout fuel, or even a healthier dessert when cravings hit.

The dark chocolate topping takes these bars to the next level. Instead of being mixed throughout, it’s melted and spread over the top, creating a satisfying chocolate layer that hardens as it chills. This gives the bars that bakery-style look and a rich chocolate bite that contrasts beautifully with the soft coconut base. Using dark chocolate also keeps the sweetness in check while delivering a deeper, more grown-up flavour.

Another reason this recipe is a favourite is how easy it is to customise. Prefer a stronger coconut flavour? Add coconut extract or extra shredded coconut. Want more crunch? Stir chopped almonds or cashews into the base. You can even drizzle extra chocolate over the top for a decorative finish that feels indulgent but still aligns with healthy eating goals.

Meal prep becomes effortless when recipes are this simple. Once set, these Dark Chocolate Coconut Protein Bars store beautifully in the fridge or freezer, making it easy to grab a nourishing snack whenever you need one. They are perfect for busy days, lunchboxes, or travel, and they satisfy sweet cravings without the sugar crash that comes from store-bought bars.

Healthy snacks don’t need to be boring or complicated. These No-Bake Dark Chocolate Coconut Protein Bars prove that with a few simple ingredients and a little prep, you can enjoy something delicious, satisfying, and supportive of your goals – all while tasting like a treat.

Ingredients

Bar Base

  • 1 cup rolled oats
  • 1 cup dates, soaked 30 minutes and drained
  • 1 cup desiccated coconut
  • 1/2 cup nuts - cashews, almonds, pecans
  • 1/2 cup nut butter (almond or peanut)
  • 1/3 cup vanilla or chocolate protein powder
  • 2 tablespoons cocoa powder
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract

Chocolate Topping

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Toppings Optional

  • Shredded coconut
  • Chopped nuts
  • Freeze-dried fruit, crumbled

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
Place all bar base ingredients into a food processor and process until fully combined into a sticky dough.
Be careful not to over process as its nice to have texture variance and different sized “bits” in your protein bars.
Scoop the mixture out into the lined pan and smooth out evenly with a spatula or back of a spoon. Place in fridge or freezer while you melt the chocolate topping.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
Once melted pour over the base and smooth out evenly.
Sprinkle over shredded coconut or chopped nuts if desired.
Refrigerate for 1–2 hours or freeze for 30 minutes until set.
Slice into 10-12 bars or more smaller slices.
Store in the fridge for up to 1 week or freezer for up to 3 months.
