Ingredients
Bar Base
1 cuprolled oats
1cupdates, soaked 30 minutes and drained
1cupdesiccated coconut
1/2cupnuts - cashews, almonds, pecans
1/2cupnut butter (almond or peanut)
1/3cupvanilla or chocolate protein powder
2tablespoonscocoa powder
2tablespoonscoconut oil, melted
1teaspoonvanilla extract
Chocolate Topping
1cupdark chocolate chips
1tablespooncoconut oil
Toppings Optional
Shredded coconut
Chopped nuts
Freeze-dried fruit, crumbled
Instructions
Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Place all bar base ingredients into a food processor and process until fully combined into a sticky dough.Be careful not to over process as its nice to have texture variance and different sized “bits” in your protein bars.Scoop the mixture out into the lined pan and smooth out evenly with a spatula or back of a spoon. Place in fridge or freezer while you melt the chocolate topping.
Chocolate Topping
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted pour over the base and smooth out evenly.Sprinkle over shredded coconut or chopped nuts if desired.Refrigerate for 1–2 hours or freeze for 30 minutes until set.Slice into 10-12 bars or more smaller slices.Store in the fridge for up to 1 week or freezer for up to 3 months.
