This recipe is loaded with healthy ‘stuff, making them a great option on-the-go or in your gym bag, or the perfect snack to curb your sweet tooth. All delivered in an oh so nutty, fruity, buttery little ball of pure, unadulterated magic.

Ingredients

  • 1/2 cup raw pistachios
  • 1/2 cup almonds or walnuts
  • 1/2 cup dried cranberries
  • 1/2 cup dates, soaked 30 minutes and drained
  • 1/4 cup peanut (or any nut) butter
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract

Instructions

  • Place almonds and dates in food processor and process until broken down and crumbly.  Add pistachios, cranberries, peanut butter, coconut oil and vanilla and pulse just until combined leaving large chunks of pistachio.
    Be careful not to over process as its nice to have different sized ‘bits’ in your energy balls.
    Separate into 8-10 evenly sized balls depending on the size you prefer.
    Store in fridge for up to one week or freezer up to 3months.
