Cranberry Nut Energy Bars
These gorgeous looking bars are the perfect breakfast or snack. They take 10 minutes to make, are no-bake, and are great for taking on-the-go.Packed with protein, naturally sweetened and bursting with fruity flavour they are a healthy and delicious dessert or snack.Easily customizable, you can add your own choice of nuts or dried fruit.The intense crimson colour is created with freeze dried fruit powder but this can be left out and they will taste just as good.Quickly whipped up in the blender, you can always have on hand some healthy, tasty anytime snacks. Much better than reaching for something unhealthy and loaded with sugar and/or other nasty chemicals. This is called the “addition” diet which is all about adding foods into your diet that 'contribute' to your health balance and enhancing meals and snacks by incorporating nutrient-dense options. The idea with improving eating habits, instead of fixating on what to eliminate, this approach encourages adding wholesome options to enhance the overall nutritional value of the diet.Its all about finding healthy replacements for your ‘not so healthy’ favourite foods so you don’t even miss them.Keeping a stock of healthy treats like this simple, no fuss recipe is the best way to do this.
Ingredients
- 1 cup almonds, walnuts or a mix
- 1/2 cup oats, instant or quick
- 1/2 cup desiccated coconut
- 1/2 cup dates, soaked at least 30 minutes and drained
- 1/2 cup dried cranberries
- 1/2 cup hemp hearts (seeds)
- 1/4 cup peanut (or any nut or seed butter)
- 1 teaspoon vanilla extract
- 1 tablespoon freeze dried raspberry powder (optional)
Instructions
- Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Place almonds and coconut into a food processer and process until broken down and crumbly. Add oats, dates, cranberries, hemp seeds, peanut butter and vanilla extract and continue to process until mixture is sticky and well combined. Be careful not to over process as its nice to have texture and different sized “bits” in your cranberry bars.Scoop the mixture into the baking tin, press down on top with a spatula or back of a spoon so the surface is even.Place in the fridge for a couple of hours to firm up then carefully remove from the tin, using the long ends of the baking parchment as leverage and cut into 8-12 bars.Store the bars in the fridge in between snacking for about a week.
