Cottage Cheese Protein Bites
Ingredients
- 1/2 cup cottage cheese
- 1/2 cup cashew (or any other nut) butter
- 1/4 cup almond flour or oat flour (oats blended to a flour)
- 2 tablespoons honey or maple syrup
- 1 scoop protein or collagen peptides powder
- 1 teaspoon vanilla extract
White Chocolate Coating
- 1 cup white chocolate chips
- 1 tablespoon coconut oil
Chocolate Drizzle – Optional
- 1/4 cup milk or dark chocolate chips
- 1 teaspoon coconut oil
Toppings Optional
- Shaved chocolate
- Chocolate sprinkles
- Chocolate chips
- Cocoa powder
Instructions
- In a food processor, blend cottage cheese until smooth. Add cashew butter, almond flour, honey, protein powder and vanilla extract - blend again until creamy.Scoop into 12 (more or less depending on your preferred size) balls and roll using your hands.Place on a parchment paper lined tray and place in freezer for at least 30 minutes to firm up.
White Chocolate Coating
- Place white chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, remove the protein balls from the freezer and after checking they are firm and set, use two forks to hold each ball and one by one, dip into the melted chocolate. Roll them around until fully coated, then place back on the parchment lined tray.Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl.
Chocolate Drizzle Optional
- Melt the milk or dark chocolate in the same way you did the white chocolate and once melted drizzle over the protein balls with a spoon.Add any toppings while the chocolate is wet so it sticks. Place back in freezer or fridge for 15 minutes until chocolate is set.Store in fridge for up to 1 week or freezer for up to 3 months.
