They can be whipped up in less than 20 minutes and keep well in the fridge for up to a week (although they never last that long!)

Coconut White Chocolate Blueberry Protein Bites
Ingredients
Coconut Butter White Chocolate Ganache
- 1/2 cup coconut butter, store bought or sugar free recipe below in notes
- 1/2 cup white chocolate chips
- 1/4 cup protein or collagen peptides powder, plain or vanilla
- 1 teaspoon vanilla extract
Blueberry Jam
- 2 cups blueberries, fresh or frozen
- 1/2 cup water
- 2 tablespoons honey or maple syrup
- 1 lemon, juice and zest
Topping Optional – choose one, multi or none
- 1/4 cup freeze-dried blueberries, crushed into powder
- 1/4 cup powdered sugar substitute like stevia, erythritol, allulose, or monk fruit
- 1/2 cup desiccated coconut
Instructions
- Make the blueberry compote first.Place half the blueberries (1 cup) honey, water and lemon juice and zest into a small saucepan and gently simmer for 8 minutes stirring occasionally. The blueberries breakdown and release their juices (about 5–7 minutes).Add the remaining 1 cup blueberries and cook a further 8 minutes, stirring occasionally. You want some big chunks of blueberries remaining.Remove from the heat. The mixture will become thick and jammy as it cools.
Coconut Butter White Chocolate Ganache
- Place coconut butter and chocolate chips in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the coconut butter and chocolate chips together.Let the mixture cool to room temperature then scoop out small portions and roll them into small (12 or more) balls with your hands. Place them on a parchment-lined baking sheet.Create a hole or well inside each one with your finger or the end of a wooden spoon and insert a teaspoon (or more) of the blueberry compote into each one. Mold the coconut butter chocolate mixture around the berry compote so you have a little berry center in each one and the berry mixture is completely covered. Or for a simpler method, add the blueberry compote to the coconut butter chocolate mixture, stirring briefly to create a swirl effect. The create your balls from there.Roll in your chosen topping and if desired, decorate with fresh blueberries on top of each protein ball.Serve chilled and enjoy!
