I’ve got a delicious smoothie bowl for you today! It’s like dessert that’s healthy enough for breakfast! I know, right? It’s simple to make too, high protein, low sugar and filled with good fats from coconut. I even ate it with a spoon!

Ice-cream for breakfast? Um, yes, please! This smoothie bowl truly is like ice-cream in every way. It’s thick, it’s creamy and it’s flavorful. Made with frozen bananas, it is naturally sweetened. Its exquisite creaminess comes from full fat coconut milk that’s frozen in the form of ice-cubes. I recently learned this wonderful smoothie bowl hack and it’s a true game changer!

You keep some coconut cream or milk frozen in cubes in your freezer so you can pull out one or two when you make a smoothie at any time. It adds more thickness and creaminess to any protein shake or smoothie bowl.

Ingredients

  • 1 banana, sliced, frozen
  • 3/4 cup full fat coconut milk, frozen in an ice cube tray
  • 1 scoop protein or collagen peptides powder, plain or vanilla
  • 2 tablespoons desiccated coconut
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract

Toppings Optional

  • 2 tablespoons desiccated coconut
  • 2 tablespoons whipped coconut cream –recipe below in notes

Instructions

  • Place banana, frozen coconut milk cubes, protein powder, coconut oil, coconut flakes into a high powered blender and blend until creamy.
    Top with whipped coconut cream (recipe below in notes) and sprinkle more coconut flakes on top.
