Coconut Cream Energy Balls
Ingredients
- 1 1/2 cups desiccated coconut
- 1/2 cup coconut butter store bought or recipe below notes
- 1/4 cup coconut (or oat) flour
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
Chocolate Coating
- 1 cup chocolate chips
- 1 tablespoon coconut oil
Topping
- 1/2 cup desiccated coconut
Instructions
- In a food processor, combine coconut, coconut butter, coconut flour, honey and vanilla. Process until ingredients have thoroughly mixed into a sticky batter. Taste test and add more honey or vanilla if you think it needs it.Transfer mix to a bowl and roll into 10-12 tablespoon sized balls. Place balls on a small pan lined with parchment paper and place in freezer for at least 30 minutes to set.While the coconut balls chill, prepare the melted chocolate.
Chocolate Coating
- Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Remove coconut balls from freezer and drop into the melted chocolate one at a time, using a fork to roll them around to cover completely, and carefully placing back onto the parchment paper.Sprinkle each ball with coconut and place the tray back in freezer once again for at least 10 minutes. Enjoy immediately or store in the refrigerator for up to five days.
