Coconut & Cashew Strawberry Fudge

Sweet, nutty and deliciously fudgy, this cashew fudge is a great place to start if you want to have a go at making your own healthy snacks and treats! It's perfect as a homemade gift too.
It’s a healthy “fudge” recipe made from cashews, strawberries and coconut. It tastes like little bites of strawberry milkshake!
The body of this cashew fudge is made from ground up raw cashews and coconut butter, instead of heavily sweetened condensed milk, butter and refined sugar like traditional recipes.
Not only are these Paleo-friendly recipe changes, but the cashews bring some extra nutrition that you won’t get from any traditional fudge. They have protein, healthy fat, fiber, potassium, iron, and magnesium.
What I love about Paleo type recipes: not only are you cutting out the bad stuff, you are almost always adding extra good stuff that you wouldn’t have gotten in the original recipe.
The sweetness for this cashew fudge comes from the strawberries and honey instead of processed sugar. So you are not completely denying yourself of any sweetness or any carbs ever – who could live like that?! – instead, you are making a better, more natural, healthier choice.
Not only is this fudge insanely delicious and easy to prepare, it also comes with some surprising health benefits. From vitamins and minerals to plenty of healthy fats that support hormone health and neurotransmitter production, these little delights are the perfect addition to any healthy eating plan.

Ingredients

  • 1 cup strawberries, fresh or frozen, unthawed
  • 1 cup cashews, soaked 3+ hours and drained
  • 1/2 cup coconut butter, store bought or sugar-free recipe below in notes
  • 1/4 cup coconut oil, melted
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

  • Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Or you can use silicon moulds, or even ice cube trays.
    Add all ingredients into a food processor and process until it becomes a thick paste Scoop the mixture out into your lined pan or your molds of choice.
    Spread out evenly with a spatula or back of a spoon.
    Place into the freezer for at least 45 minutes, Cut into 16 squares or more smaller cubes.
    Keep in the freezer for up to a couple of months. Or keep in the fridge for a slightly softer texture for a few weeks.
