Coconut Cashew Protein Snack Balls
Ingredients
- 1 cup cashews, soaked 3+hours and drained
- 1/2 cup desiccated coconut
- 2 scoops protein or collagen powder, vanilla or plain
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- Extra shredded coconut (for garnish)
Instructions
- Drain the soaked cashews and process them in a food processor until smooth.Add desiccated coconut, protein powder, coconut oil, honey and vanilla. Process again until the mixture forms a dough-like consistency. Taste test and add more honey or vanilla if you think it needs it.With damp hands, roll small portions of the mixture into 14-16 bite-sized balls or your size preference. Roll each ball in shredded coconut until fully covered.Refrigerate in an airtight container for at least 1 hour to firm up then enjoy these cold,delicious, and nutritious bites!Extra Tips: Add a pinch of cinnamon or lemon zest for extra flavor.Place an almond or a piece of dark chocolate in the center for a surprise! Store in the fridge for up to 1 week or freeze for up to 3 months.
