Coconut Cashew Protein Snack Balls

These gorgeous cashew coconut snack balls are made with just 6 ingredients in 5 minutes! They are a simple, nutritious and hearty grab-and-go snack!

Ingredients

  • 1 cup cashews, soaked 3+hours and drained
  • 1/2 cup desiccated coconut
  • 2 scoops protein or collagen powder, vanilla or plain
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Extra shredded coconut (for garnish)

Instructions

  • Drain the soaked cashews and process them in a food processor until smooth.
    Add desiccated coconut, protein powder, coconut oil, honey and vanilla. Process again until the mixture forms a dough-like consistency. Taste test and add more honey or vanilla if you think it needs it.
    With damp hands, roll small portions of the mixture into 14-16 bite-sized balls or your size preference. Roll each ball in shredded coconut until fully covered.
    Refrigerate in an airtight container for at least 1 hour to firm up then enjoy these cold,delicious, and nutritious bites!
    Extra Tips: Add a pinch of cinnamon or lemon zest for extra flavor.
    Place an almond or a piece of dark chocolate in the center for a surprise!
    Store in the fridge for up to 1 week or freeze for up to 3 months.
