Chocolate Peanut Butter Protein Pops

These healthy popsicles are made with creamy yogurt, chocolate protein powder and peanut butter. Dipped in dark chocolate, they are a fun, eye-catching treat that is perfect for any occasion and so easy to make!

Ingredients

  • 1 cup thick Greek-style yogurt
  • 1/4 cup oat, almond or coconut flour
  • 1/4 cup protein powder, chocolate
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract

Center Filling

  • 1/4 cup peanut butter
  • 1 teaspoon honey or maple syrup

Chocolate Coating

  • 3/4 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • In a bowl, mix yogurt, protein powder, honey, cocoa powder, and vanilla until smooth.
    With slightly wet hands, divide the mixture into 5 portions and shape into round mounds, making a small indent in the center of each.
    In a separate bowl, stir together peanut butter and honey until smooth. Fill each indent with1 teaspoon of the peanut butter mixture (lust divide up the mix between the popsicles). Then insert a popsicle stick into each one.
    Place the pops on a parchment-lined tray and freeze for 2-3 hours until firm.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the pops and after checking they are firm and set, use two forks to hold each pop and one by one, dip into the melted chocolate, push them around until fully coated, then place back on the parchment lined tray.
    Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. 
    Sprinkle with flaky salt if desired, then chill until chocolate has set.
    Once chocolate is set and crisp, enjoy your Protein Pops.
