Chocolate Peanut Butter Banana Cups

This take on the classic peanut butter cup was inspired by one of my favorite sandwiches, a peanut butter and banana sandwich. This little candy has the best combo of flavors — chocolate, peanut butter and bananas.

What time is it when you normally feel the rumbling of a craving? Does it strike after dinner when you are sitting on the couch after a long day, and you have just realized that there’s nothing sweet in the house?

Many after-hours ice cream runs have started this way!

If you’re committed to healthy, clean eating, you know that giving in to cravings for refined, processed, sugary sweets can be damaging to your eating plan and your health! But you don’t need to swear off sweets completely!

The idea is to stock up on healthy alternatives to our favorite sweets, like these peanut butter and banana cups the healthy treat on hand when cravings strike!

Enter rich, chocolatey, peanut buttery cups that melt in your mouth but are made with 100% clean eating ingredients. Each bite contains nothing but dark chocolate, which is lower in sugar than milk chocolate and rich in flavonoids, peanut butter for protein, banana for a heaping dose of antioxidants, and coconut oil, one of our favorite healthy substitutes for butter.

They are also incredibly easy to make. I melt the chocolate in a ziplock bag (fewer dishes to wash!) and pipe the chocolate into paper muffin liners.

Or you can simply spoon your melted chocolate into the bottom of your baking cups, top with a slice of banana and a scoop of peanut butter mixed with coconut oil. Then pipe another dollop of melted chocolate on top. Oh my!

Then came the fun part. Taste testing!

I was surprised to find that they were edible straight from the freezer. They were hard but not too hard to bite and the filling was almost like a cross between ice-cream and fudge. So good!

These 4 ingredients Peanut Butter Banana Cups are a lighter alternative to more traditional versions and are literally melt in your mouth delicious. Eat from the freezer for an ice-creamy, fudgy type filling, or leave to defrost for a few minutes and they will become super creamy, smooth and oozy!

I can’t decide whether I prefer these bad boys straight from the freezer, or defrosted, soft and oozy. My way around this dilemma was to eat two. One straight away and one a few minutes later.

I suggest you do too, at least the first time, then you will know which you prefer. If you still can’t decide you will just have to eat two every-time like me.

Chocolate Peanut Butter Banana Cups

These 4 ingredient Peanut Butter Banana Cups are a lighter alternative to more traditional versions and are literally melt in your mouth delicious. Eat from the freezer for an ice-creamy, fudgy type filling, or leave to defrost for a few minutes and they will become super creamy, smooth and oozy!

Ingredients

  • 1-2 bananas sliced into 12 x 1/2-inch thick even rounds
  • 1 1/2 cups chocolate chips, or bars broken into pieces
  • 1 tablespoon coconut oil
  • 1/2 cup peanut butter

Instructions

  • Place a silicone 12-muffin tray onto a medium, flat baking sheet. Or use paper muffin liners in a normal12-hole muffin pan.
    Place around half the chocolate chips and coconut oil in small dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Spoon or pipe about 1 teaspoon of melted chocolate to the bottom of each cup and using a silicone brush or back of a spoon spread the chocolate up the muffin slots to cover the bottom and one quarter to halfway up the sides to make a little cup.
    Place in freezer or fridge to set for about 15 minutes.
    Then, add the banana slice and top with 1 teaspoon of peanut butter for each chocolate cup.
    Melt the remaining half of the chocolate as above and spoon or pipe it on top of the cups to cover them completely.
    Freeze until set, about 1-2 hours.
    Keep the chocolate cups frozen until ready to eat, and take them out of the freezer 5 minutes before serving.
