These babies are like a mini ice cream bar, but much simpler and much healthier. They are so easy to make with only 3 core ingredients and zero baking, nothing not to love!

Its nice for a change to be able to create a dessert or snack that is so simple yet so delicious. This recipe is super quick, easy to make, budget-friendly, and healthy. The reality is, you don’t have to spend an excessive amount of time cooking in order to create a dish that is packed with nutrients and yummy to eat.

This recipe will let your taste buds run wild with fun toppings. Any nut butter, honey, coconut, jam and cinnamon sugar are just some of the ideas I came up with. But really, the options are endless.

I ALWAYS like to end my night with a sweet treat. On a recent particular evening, I made these chocolate peanut banana boats. They are essentially banana quarters drizzled with some melted chocolate, chopped peanuts and finished with a sprinkle of salt.

I love the sweet and salty combination as well as the crunch. This snack is insanely easy to make, but it really hits the spot at the end of the night. Sweet and delicious.

Create your own favorite combination and here is what you will need:

Ripe/Overripe Bananas – The first essential ingredient you will need for this recipe is a ripe or even an overripe banana. You will want the peel of your banana to be yellow with brown spots for optimal flavor and sweetness. However, make sure that your banana is not mushy.

Chocolate Chips – The chocolate chips are another ingredient that you need to make these banana boats. They will be melted and used as a spread to top off your banana boats with. You can use any chocolate you choose – dark, milk, semi-sweet or white or a mix.

The chocolate spread will provide a sweet and decadent chocolate flavor. Keep in mind though that if you use dark chocolate, the chocolate spread will be slightly less sweet.

Roasted Peanuts – The roasted peanuts will be chopped up and added on top of the melted chocolate for a delicious, chocolate peanut flavor combination.

If you don’t have peanuts on hand, you can also sub crunchy or smooth peanut butter or any other nut or seed butter such as cashew, almond or tahini (sesame seed) butter.

(Optional) Sea Salt – The sea salt is an optional final ingredient that you can add on top of your banana boats for an extra strong, sweet and salty flavor combo. If you want to get really fancy, you could use flaky salt. I used Himalayan pink salt on top of my banana boats.

These make a perfect dessert or snack for children too and will encourage them to eat more fresh fruit. You can dress them up by drizzling a thin line of caramel or chocolate syrup over some whipped cream or adding some sprinkles or shredded coconut or other kid-friendly treats on top.

Ingredients

  • 1 medium ripe banana
  • 2 tablespoons chocolate chips
  • 1 teaspoon coconut oil (to thin the chocolate)
  • 2 tablespoons roasted peanuts (finely chopped, can also sub peanut butter)
  • Optional dash of salt

Instructions

  • Peel and cut the banana in half crosswise, then cut each half down the middle lengthwise to create four equal banana quarters.
    Lay each banana quarter face up on a plate.
    Next melt the chocolate.

Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once the chocolate is smooth and spreadable, drizzle it evenly across the tops of the four banana quarters with a spoon.
    Sprinkle each banana quarter with the roasted peanuts (or spread on some peanut butter).
