Ingredients

  • 1 cup natural nut butter (peanut or almond)
  • 1/2 cup desiccated coconut
  • 1/2 cup chocolate protein powder
  • 1/2 cup chopped nuts (almonds, pecans peanuts, or walnuts)
  • 1/3 cup maple syrup or honey
  • 1/4 cup coconut oil, melted
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Toppings Optional 

  • Melted dark chocolate drizzle
  • Extra shredded coconut
  • Flaky sea salt

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a mixing bowl, combine nut butter, maple syrup, melted coconut oil, and vanilla. Stir until smooth.
    Add protein powder, cocoa powder, and sea salt. Mix until thick and fully combined.
    Fold in shredded coconut and chopped nuts.
    Press the mixture into the prepared tin, smoothing the top.
    Add optional toppings if using.
    Chill in the fridge for 1–2 hours or freeze for 45–60 minutes until firm.
    Slice into 16-20 squares (more or less) and store in an airtight container in the fridge for up to 1 week or freezer for up to 3 months.
