Bark is simply layers of fruit, nuts and chocolate then frozen and broken into chunks that resemble tree bark with scruffy edges and random shapes for a healthy delicious dessert or treat. It is another “As Seen on TikTok” recipe. I saw this and knew I had to make it! It’s a yummy treat that you can keep in the freezer and grab a chunk whenever you feel the need for a sweet treat!

Bark is very easy to make, packed with delicious flavors, and the perfect combination of creamy, fruity, and crunchy. These bites of heaven are perfect for satisfying your sweet tooth without feeling guilty. They are the perfect ‘to die for’ no bake treat.

All manner of bark recipes have gone viral. I love how amazing new food trends are being created on social media internet websites and some of them go viral and get loads of attention.

I have tried quite a few of these viral TikTok recipes recently and they do not disappoint. Its not every day that a food trend exceeds my expectations, but this one is definitely a winner. And this one is honestly just so adorable. As soon as I saw this trend pop up, I had to make. I mean, how cute with all sorts of chocolate, nuts and fruit stuck to it? Almost too cute to eat … key word being almost.  lol.

And by adding superfoods such as nuts, seeds, coconut chips or dried fruit you are adding extra nutrition to your treat. Break into bite sizes pieces to share with friends and family, or package into bags to use as a ‘thank you’ gift.

Homemade bark is a great way of lifting plain chocolate to a higher level and making it a healthier treat. And the beauty of it doesn’t reside in the end product only. Making your own bark is such a fun way of being creative in the kitchen and something you can do with children. It’s not as messy as some other desserts, and your kids can let their creativity go wild.

I’m really so excited with how this recipe turned out. Perfectly sweet, salty, tart, and crunchy. You have to make it! I’m obsessed and already need to make more. You don’t really even need a recipe, or even to measure any ingredients, to make gorgeous bark – it’s about getting creative and using your favourite flavours.

I love mandarin oranges and when citrus is in season, I use them to create desserts that are not too time consuming and are not taxing on the waistline. If you are craving something sweet after every meal like me, the desserts have to be mindfully crafted such that they not only fulfil the sweet cravings but are decadent, nutritious and easy to make.

Chocolate bark is one of my favourite and the easiest foolproof desserts to whip together. With the melted chocolate add the mini orange segments, some nuts, some protein powder to make it more balanced and bingo you have an awesome sweet treat or healthy dessert – orange minis meets chocolate treats.

Being a Fitness Professional, I am always calculating nutrition in my head, so the recipe and the food provide the most optimal package of nutrition, ease of cooking, minimal ingredients and cooking techniques.

This chocolate bark ticks all the boxes and will give you the complete nutrition of the mandarin and antioxidants of a good quality chocolate. The appearance of the bark itself may not be that appealing but once cut into bite size pieces, the glisten of the mandarin flesh covered with rich dark chocolate make it quite a dessert statement. A healthy snack to cure those sweet tooth cravings quickly and deliciously.

Chocolate Mandarin Protein Bark

This mandarin bark has just 5 ingredients. Chocolate, mandarin oranges, coconut oil, chopped peanuts and your favourite protein or collagen powder. It’s the perfect refreshing snack, so easy to whip up, healthy and packed with protein.

Ingredients

  • 3-4 mandarin oranges, peeled + divided into segments, keep a few for the topping garnish
  • 3/4 cup dark chocolate chips
  • 1 tablespoon coconut oil
  • 1/4 cup protein or collagen peptides powder
  • 1/2 cup peanuts, roasted, chopped

Topping

  • Chopped peanuts + flaky salt

Instructions

  • Line a small baking tray with parchment paper.
    To a medium bowl, add ¾ of the orange segments. Melt the chocolate next.
    Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Add the protein powder and ¼ cup of the chopped peanuts and mix until combined.
    Pour this mixture into the bowl with the divided mandarin segments and stir until coated in the chocolate mixture.
    Spread onto the tray plate lined with parchment paper and spread out into a square or oblong shape around ½ inch in thickness.
    Top with the saved mandarin segments, the rest of the chopped peanuts and a sprinkle of flaky salt.
    Freeze for 2 hours,break into pieces to serve.
    Store in the fridge for up to 1 week or freezer for up to 3 months.
