Ingredients
3-4mandarin oranges, peeled + divided into segments, keep a few for the topping garnish
3/4cupdark chocolate chips
1tablespooncoconut oil
1/4cupprotein or collagen peptides powder
1/2cuppeanuts, roasted, chopped

Chopped peanuts + flaky salt
Instructions
Line a small baking tray with parchment paper.To a medium bowl, add ¾ of the orange segments. Melt the chocolate next.Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Add the protein powder and ¼ cup of the chopped peanuts and mix until combined.Pour this mixture into the bowl with the divided mandarin segments and stir until coated in the chocolate mixture. Spread onto the tray plate lined with parchment paper and spread out into a square or oblong shape around ½ inch in thickness.Top with the saved mandarin segments, the rest of the chopped peanuts and a sprinkle of flaky salt.Freeze for 2 hours,break into pieces to serve. Store in the fridge for up to 1 week or freezer for up to 3 months.
