These babies are truly the ultimate healthy any time snack. They are protein packed, no-bake and super easy to make (less than five minutes). They are tasty, refreshing, and super convenient to store in the freezer and pull out when you want a sweet treat. Your ice cream cravings will be satisfied!

Why you will love this recipe:

Refined sugar free – this recipe is naturally sweetened with honey instead of white table sugar or high fructose corn syrup.

Customizable- You can use different kinds of fruit, granola, nuts as add ins or toppings to adjust the flavor to your preference. You can add as much (or as little) sweetener that you like to make it in your way and taste.

All this said, these treats are extremely versatile. You can use chopped fruit or berries on the inside. Chop it, slice it, or use small fruit whole, like all sorts of berries, cherries, an apricot, and some green grapes. The more colors you use the prettier they will be.  You can use a flavored yogurt for more sweetness and flavour.

They are a little hard straight out of the freezer but if you let them sit for 15 minutes they become softer and easier to eat. You can even break popsicle sticks in half and pop one into each bite for easier eating.

These frozen yogurt bites are exceptionally yummy; children love them, and adults love them as well. Look no further for the cold treat or ice cream replacement your entire family will love. It is right here!

Servings 4

Ingredients

  • 1 cup thick Greek-style yogurt
  • 1/4 cup cashew (or any nut or seed) butter
  • 2 tablespoons honey or maple syrup
  • 1/2-1 teaspoon fresh ginger, grated or powdered ginger to taste
  • 1 scoop protein or collagen powder
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • Handful of nuts, optional (I used chopped peanuts)
  • Popsicle sticks whole, or cut in half

Instructions

  • Combine the yogurt, cashew butter, honey, ginger, protein powder and vanilla extract in a small bowl. Mix well until combined. Taste test and add more honey, ginger or vanilla extract if you think it needs it.
Line a baking sheet with parchment paper or use a silicon mat.
Use a large cookie scoop or spoon to scoop the mixture in dollops onto the baking sheet. Each dollop is about 2 rounded tablespoons in size, making 4 bites.
Place the popsicle sticks in the center of each making sure the sticks are well covered in the yogurt mixture so they hold firmly while eating.
Place the bites in the freezer for at least 2 hours, or until firm. The bites need to be fully frozen in order to dip them in chocolate.
Once the bites are frozen, melt the chocolate and coconut oil. You can either melt the chocolate in the microwave at 20 second intervals, or over the stove top on low heat. Add the chopped nuts to the melted chocolate.
Remove the bites from the freezer and dip them, one at a time, into the melted chocolate using the popsicle sticks as a handle.
Place the dipped bites back on the lined baking sheet. Place back in freezer until the chocolate is set, around 10 minutes.
