Here is another one of those ‘bet you can’t eat just one’ treats! When you are on the go, powering through work, or finishing up a workout, it can be hard to find a snack that’s healthy, filling and actually tastes good.
If you are looking to cut back on your sugar, but still want to enjoy something sweet, this is a great recipe to make. It has got plenty of healthy fats but is low in sugar. It tastes great and is a good way of getting extra nutrients into your diet while satisfying your sweet tooth. These delicious protein snack balls really are the BEST little pick-me-ups. I can’t get over these! Who needs corn syrup, truckloads of white refined sugar, butter and heavily sweetened condensed milk when you can have much healthier and good for you sweet treat.
What makes this recipe special is the coconut butter. You can buy it or make you own (recipe below in notes). I’ve recently started using it in everything, from drizzling over oatmeal to blending into smoothies and topping smoothie bowls. Here it creates a delicious creaminess that pairs perfectly with chocolate for a truly delicious and healthy candy alternative. If you are new to coconut butter, this recipe is the perfect introduction to this sweet treat! It’s actually really, really good for you.
In fact, coconut butter packs a boatload of health benefits. I like to store the leftover snack balls in the freezer and just pull one (or two) out before I want to enjoy them. They are best chilled + last much longer this way. You can let them lightly thaw OR eat them frozen for a melt-in-your-mouth treat that is buttery and delicious!
I have been experimenting with a new way of eating that incorporates a ton of healthy fats into my daily diet. I love the new healthy eating trends as its ALL about ‘adding’ to your diet, not reducing or eliminating certain food groups. More protein, more veges, more healthy fats and so on…
This recipe is a great and delicious way to get some extra healthy fats into your diet. Just be warned though, these snack balls are addictive and totally satisfying. And…so easy to make. Just mix, chill, roll, dip and eat. Few ingredients to buy, and minimal equipment to wash – my kind of recipe! Many people have very different views on how much fat to eat in a day, but whatever dietary choices you make, all can agree that these treats are high in heart-healthy fat, which helps you to feel full and satisfied with just a small amount!
If you love coconut, you will love this rich coconut cream treat. It has an unusual creamy center. The filling is not the traditional condensed milk variety – mine is simple, just blend coconut cream with coconut milk. You will make a creamy coconut buttery-ness that melts in your mouth and makes you feel great. The new way of thinking is – “Eat to lose fat. Fat isn’t the enemy if you are eating the right sources!” Sounds like a win, right?

Chocolate Coconut Protein Snack Balls
Ingredients
- 1` cup coconut butter – store bought or homemade recipe below in notes
- 1/2 cup coconut milk, canned, full fat, room temperature and shaken
- 1/4 cup protein powder, plain or vanilla
- 2 tablespoons coconut flour
- 1 teaspoon vanilla extract
Chocolate Coating
- 1 cup chocolate chips
- 1 tablespoon coconut oil
Instructions
- Soften the coconut butter by placing the jar in a bowl of hot water. You want it softened but not runny. Or you can put it in a small dish and give it a couple of 10 second blasts in the microwave. Or place the jar in a bowl of warm water.Place the softened coconut butter into a bowl along with the coconut milk, coconut flour, protein powder and vanilla extract. Mix until well combined. Taste-test. Coconut is naturally sweet, however, if you want a sweeter mixture, add a teaspoon or two of honey, maple syrup or even powdered sugar if you want to keep the color white.Place the mixture in the fridge for 30 minutes or so until it firms up so you can roll it into balls.Use a 2-tablespoon scoop and roll into balls and place on a parchment paper lined tray. Place in the fridge while you melt the chocolate.
Chocolate Coating
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Remove the snack balls from the fridge and working quickly, using two forks, dip one ball at a time into the bowl of melted chocolate until it is fully coated. Lift the ball from the bowl of chocolate and let any excess drip off, then place it onto the lined tray, Repeat with the remaining balls.Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. Put the snack balls in the fridge for 15-20 minutes to set the chocolate.Once chocolate is set and crisp, enjoy your chocolate coconut protein snacks.Store in the fridge for up to 1 week or freezer for up to 3 months.
