Chocolate Coconut Protein Snack Balls

A simple treat with a creamy coconut center covered in a snappy chocolate shell. Made with just 5 main ingredients for the snack balls and 2 for the chocolate coating, these bite-sized coconut delights are a sweet treat equally fit for dessert or an afternoon snack!

Ingredients

  • 1` cup coconut butter – store bought or homemade recipe below in notes
  • 1/2 cup coconut milk, canned, full fat, room temperature and shaken
  • 1/4 cup protein powder, plain or vanilla
  • 2 tablespoons coconut flour
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Soften the coconut butter by placing the jar in a bowl of hot water. You want it softened but not runny. Or you can put it in a small dish and give it a couple of 10 second blasts in the microwave. Or place the jar in a bowl of warm water.
    Place the softened coconut butter into a bowl along with the coconut milk, coconut flour, protein powder and vanilla extract. Mix until well combined. 
    Taste-test. Coconut is naturally sweet, however, if you want a sweeter mixture, add a teaspoon or two of honey, maple syrup or even powdered sugar if you want to keep the color white.
    Place the mixture in the fridge for 30 minutes or so until it firms up so you can roll it into balls.
    Use a 2-tablespoon scoop and roll into balls and place on a parchment paper lined tray. Place in the fridge while you melt the chocolate.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the snack balls from the fridge and working quickly, using two forks, dip one ball at a time into the bowl of melted chocolate until it is fully coated.
    Lift the ball from the bowl of chocolate and let any excess drip off, then place it onto the lined tray,  Repeat with the remaining balls.
    Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. 
    Put the snack balls in the fridge for 15-20 minutes to set the chocolate.
    Once chocolate is set and crisp, enjoy your chocolate coconut protein snacks.
    Store in the fridge for up to 1 week or freezer for up to 3 months.
