Chocolate Coconut Protein Candy Bites

Ingredients

Chocolate Layer

  • 2 cups dates, soaked 30 minutes and drained
  • 1 cup oat flour (oats blended to a flour)
  • 1/2 cup desiccated coconut
  • 1/4 cup cocoa powder
  • 1/4 cup coconut oil, melted

Vanilla Coconut Layer

  • 1 1/2 cups desiccated coconut
  • 1 cup coconut butter, store bought or homemade recipe below in notes
  • 1/4 cup protein or collagen peptides powder, plain or vanilla
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

Chocolate Layer

  • If you need to process the oats into a flour, do this first. Add the rolled oats into a food processor and process until broken down into a rough flour. Add dates, coconut and vanilla extract and continue to process until mixture starts to stick together into a dough.
    Transfer the dough into 10-12 muffin liners in a muffin pan or use a silicon mold.  

Vanilla Coconut Layer

  • Blend all the ingredients for the coconut layer in the food processor until well combined.
    Spoon the filling onto the chocolate layer and spread out evenly with the back of a spoon.
    Put the pan in the freezer for at least one hour to set.
    Store the coconut cups in the fridge (for up to 5-6 days) or in the freezer (for up to 3 months). Let them thaw for about 20 to 30 minutes before serving.
