Ingredients
Chocolate Layer
2cupsdates, soaked 30 minutes and drained
1cupoat flour (oats blended to a flour)
1/2cupdesiccated coconut
1/4cupcocoa powder
1/4cupcoconut oil, melted
Vanilla Coconut Layer
1 1/2cupsdesiccated coconut
1cupcoconut butter, store bought or homemade recipe below in notes
1/4cupprotein or collagen peptides powder, plain or vanilla
1/4cuphoney or maple syrup
1teaspoonvanilla extract
Instructions
Chocolate Layer
If you need to process the oats into a flour, do this first. Add the rolled oats into a food processor and process until broken down into a rough flour. Add dates, coconut and vanilla extract and continue to process until mixture starts to stick together into a dough. Transfer the dough into 10-12 muffin liners in a muffin pan or use a silicon mold.
Vanilla Coconut Layer
Blend all the ingredients for the coconut layer in the food processor until well combined. Spoon the filling onto the chocolate layer and spread out evenly with the back of a spoon.Put the pan in the freezer for at least one hour to set. Store the coconut cups in the fridge (for up to 5-6 days) or in the freezer (for up to 3 months). Let them thaw for about 20 to 30 minutes before serving.
