Chocolate Coconut Butter Bites

Want a healthy treat that is sooo good for you? These little bites are made with coconut butter, honey, vanilla and chocolate chips. That’s it! They are so easy to make it’s dangerous! You may need to keep these ingredients out of your home just so you are not tempted to make them daily. You are warned!  😊
This recipe is the perfect treat if you love coconut like I do. I’m obsessed with coconuts, they are my favorite ingredient in desserts and healthy snacks.
The world is going coconuts. Following the popularity of coconut water, a broad spectrum of foods derived from the humble coconut are available. It now comes in a variety of forms from water to milk, cream, sugar, butter, oil, flour, dried and shredded allowing for a variety of creative ways to add coconut to a healthy diet.
Coconut contains a unique type of medium chain saturated fat called lauric acid that research shows raises HDL or "good" cholesterol levels, which lowers overall heart disease risk.
As a plant food, coconuts also contain disease-fighting phytochemicals or antioxidants. Research suggests that coconut products helps boost metabolism which is helpful if excess body fat needs to be lost.
Just one scoop of coconut oil delivers a wide-range of healing properties. Produced in its most natural state, coconut oil will benefit you, your children and your pets. I put some into my dogs dinner regularly.

This recipe uses coconut butter which is very different from coconut oil.
Coconut butter is the whole coconut meat that has been processed into a liquid butter. It will harden back up after coming back to room temperature.
Whereas coconut oil is purely the fat separated from the coconut meat. The two are very different and will react very differently in baking. Coconut oil is a clear color, whereas coconut butter is an off white color. Additionally, coconut butter gets much harder at room temperature or in the fridge, than coconut oil does.
I like to use coconut butter for richness. It yields a very buttery result. You can buy coconut butter in the stores or make it yourself and there is a recipe link in the notes below.

Ingredients

  • 1 1/2 cups coconut butter, store-bought or homemade recipe link below in notes
  • 1-2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Chocolate Layer

  • 1 1/2 cups chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Gently warm and soften coconut butter, vanilla extract and honey together in a small saucepan over low heat. Be careful not to overheat as you can easily burn the coconut butter.
    Scoop the softened mixture into a 12 cavity silicone snack mold making sure to only fill them 3/4 full. Press each one down with the back of a teaspoon so the mixture is even.
    Note: Warming the coconut butter allows you to easily get it into the little squares of the mold. If you do not have a snack mold, see note below.
    Freeze the coconut squares for 10 minutes or until solid.

Chocolate Layer

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the coconut squares from the freezer and carefully spoon the melted chocolate over the cold coconut squares.
    Place the tray back in the freezer to set, approximately 10 minutes. Pop the squares out of the mold. Serve immediately or store in container in fridge.
    Note: If you do not have a silicone snack mold simply pour the softened coconut butter mixture into a lined 6” or 8” cake pan, pour chocolate topping on top and when chilled down and solid, cut into 12 squares to serve.
