I love no bake desserts, as they are some of the easiest and most delicious recipes to make. Chewy and soft and I cannot stop shoveling these splendid cookies in my face! They are seriously so satisfying with a sip or five of chilly milk.

They are extremely easy to make and only include 8 simple ingredients: oats, almond flour, almond butter, coconut oil, almond butter, vanilla, your favorite protein powder and of course….chocolate.

They make a super healthy snack or dessert that can be made ahead of time and they store well. They don’t require any cooking or baking as there is no raw eggs or flour in them.  This is the new way of “unbaking”, healthier, quicker and easier.

As well as being really easy to make, these cookies are healthier than your average treat as they are made with wholesome REAL food ingredients. With the added protein powder it makes them more balanced than the traditional high carb recipe.

Old fashioned baked recipes always had tons of sugar, carbs and fats. The new modern way it to add protein making the recipe more balanced and healthy. Eating protein-rich foods has many health and fitness benefits, including:

Over the last few weeks, I have eaten more of these chocolate chip no-bake cookies than I would like to admit as I got the recipe right. They are sweet and nutty, with an addictive chewy texture that comes from lots of almond butter and whole rolled oats.

I have pretty much had a constant supply of them on hand, because as soon as you finish one batch, it only takes a few minutes to whip up another and pop it in the fridge to chill.

Ingredients

  • 1 cup rolled oats
  • 3/4 cup almond flour
  • 1/3 cup almond (or any other nut or seed) butter
  • 1/4 cup coconut oil, melted
  • 1/4 cup protein or collagen peptides powder
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chunks or chips

Instructions

  • In a medium mixing bowl, mix together oats, almond flour, almond butter, coconut oil, protein powder, honey and vanilla extract until creamy. Use a wooden spoon or spatula to stir until a soft dough forms. Fold in chocolate chunks.
    Use a small cookie scoop to create 8 (more or less) mounds of dough on to a parchment-lined baking sheet. Flatten dough down and mold into cookie shapes. Transfer to the freezer for 10 minutes to set.
    Store cookies in an airtight container in the fridge for a soft texture and freezer for a harder, chewier texture. Will keep in fridge for up to 1 week or up to 3 months in freezer.
