Choc-Peppermint Ice Cream Bars

Calling all ice cream lovers! Try this healthy Choc-Peppermint Protein Ice Cream Bar recipe packed with protein, fibre and healthy fats!
Make your own protein ice cream bars using just a handful of ingredients and your favourite whey or plant-based protein powder! They are super easy to make and healthy too. Customise them with whatever your heart desires and you have the perfect, high-protein anytime treat at 16g of protein per pop!

Ingredients

  • 1 cup cashews, soaked 3+hours and drained
  • 1 cup coconut cream
  • 1 banana, frozen, sliced
  • 1/4 cup coconut oil, melted
  • 1 scoop any whey or plant based protein powder, chocolate or vanilla flavour
  • 2 teaspoons peppermint extract

Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil, melted

Instructions

  • Place cashews, coconut cream, coconut oil, protein powder, and peppermint extract into a food processor and process until smooth.
    Pour into a lined loaf tin and pop in the freezer to set for 2-3 hours. Once set, remove from tin and slice into bars.
     
     

Coating

  • Melt the chocolate with the 1 tablespoon coconut oil. Dip each ice cream bar into the melted chocolate then lay them on a sheet of baking paper.
    Sprinkle with cacao nibs. chopped nuts,or coconut and place back in freezer to set.
    Store in an airtight container in freezer and take out when ready to eat!
