Calling all ice cream lovers! Try this healthy Choc-Peppermint Protein Ice Cream Bar recipe packed with protein, fibre and healthy fats! Make your own protein ice cream bars using just a handful of ingredients and your favourite whey or plant-based protein powder! They are super easy to make and healthy too. Ingredients
1cupcashews, soaked 3+hours and drained
1cupcoconut cream
1banana, frozen, sliced
1/4cupcoconut oil, melted
1scoopany whey or plant based protein powder, chocolate or vanilla flavour
2teaspoonspeppermint extract
Coating
1 cupchocolate chips
1tablespoon coconut oil, melted
Instructions
Place cashews, coconut cream, coconut oil, protein powder, and peppermint extract into a food processor and process until smooth. Pour into a lined loaf tin and pop in the freezer to set for 2-3 hours. Once set, remove from tin and slice into bars.
Coating
Melt the chocolate with the 1 tablespoon coconut oil. Dip each ice cream bar into the melted chocolate then lay them on a sheet of baking paper.Sprinkle with cacao nibs. chopped nuts,or coconut and place back in freezer to set.Store in an airtight container in freezer and take out when ready to eat!
