When I’m craving Ice Cream but I want something with way less sugar that still tastes amazing, this is it! Low sugar, high protein, SO easy and delicious! Tastes just like Cherry Garcia – Ben & Jerry’s!

What I love most is how easy it is to make with just a few ingredients. It starts with cherries, protein powder and a few other simple ingredients. I stir in some mini chocolate chips at the end for that perfect bite. It feels like something you would get from an ice cream shop, but it’s actually a protein-packed snack that is perfect when you’re craving something cold and sweet. This luscious recipe is a wonderful healthy ice cream alternative. And it takes just minutes to whip up this easy healthy dessert in a food processor if you freeze the fruit ahead.

If you haven’t already heard about it, I would like to introduce you to Nice Cream, a yummy ice cream made with a frozen fruit base and other add-ins! Its my favorite healthy ice cream because it’s quick and easy to prepare, with only three ingredients required. The end result is a whole-food ice cream that is rich, creamy, and luscious enough for a special occasion (birthday party, anyone?) yet light and easy enough for an any time indulgence.

You don’t need one of those special ice cream churning machines, you simply use frozen fruit, a splash of yogurt some yummy coconut cream and some flavourings – that’s it! It sounds too good to be true doesn’t it? Ice-cream just out of healthy ingredients – yeah right! About this little concoction, I cannot hold back. It IS amazing. You will need to keep going back and trying it and saying – that can’t be right.

It tastes like ice-cream and it is so damn good! This is definitely one for the recipe bible. You will be in awe of the creamy, fruitful deliciousness before your spoon even begins to melt into the bowl. You can satisfy an ice cream craving guilt-free with this “nice cream“! Seems so simple, that it feels like you are cheating a bit…but to be honest – it’s delectable stuff. And let’s face it, why make it complicated when something this simple can taste insanely delightful!

Once you start making nice creams, you will stop buying store bought ice creams, the creaminess it has is nothing less than an ice cream and the plus point is, it is absolutely healthy!

  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1 cup thick Greek-style yogurt, plain or vanilla
  • 1 cup cherries fresh or frozen, pitted and chopped
  • 1/2 cup dark chocolate chopped, or dark chocolate chips
  • 1/4 cup honey or maple syrup
  • 1/4 cup protein or collagen peptides powder
  • 2 tablespoons cashew or almond (or any other nut or seed) butter
  • 2 teaspoons vanilla extract

Instructions

  • Note: Place the can of coconut cream in the fridge or freezer for at least 1-2 hours before making this recipe to allow coconut cream to separate.
Open chilled can and scoop out the cream that has separated and set hard on the top and place in a bowl. Save the remaining coconut water to use in a smoothie, drink, or discard.
Stir in the yogurt, chopped cherries, chopped chocolate, honey, protein powder and vanilla extract and stir until combined but chunks of cherries remain.
Transfer the ice cream to a medium loaf pan or other freezer safe container.
Cover the ice cream with plastic wrap and freeze another 2 hours or until solid.
Once frozen solid, you can thaw the ice cream in the refrigerator to make it easier to scoop.
