Cherry Chocolate Protein Nice Cream

This cherry ice cream is a favorite old fashioned ice cream flavor, stuffed with chopped cherries and chocolate chips. The perfect fruit and chocolate combo! It tastes as good as any dessert, but it’s packed with protein, cherries and just enough chocolate chips to feel like a treat.

Ingredients

  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1 cup thick Greek-style yogurt, plain or vanilla
  • 1 cup cherries fresh or frozen, pitted and chopped
  • 1/2 cup dark chocolate chopped, or dark chocolate chips
  • 1/4 cup honey or maple syrup
  • 1/4 cup protein or collagen peptides powder
  • 2 tablespoons cashew or almond (or any other nut or seed) butter
  • 2 teaspoons vanilla extract

Instructions

  • Note: Place the can of coconut cream in the fridge or freezer for at least 1-2 hours before making this recipe to allow coconut cream to separate.
Open chilled can and scoop out the cream that has separated and set hard on the top and place in a bowl. Save the remaining coconut water to use in a smoothie, drink, or discard.
Stir in the yogurt, chopped cherries, chopped chocolate, honey, protein powder and vanilla extract and stir until combined but chunks of cherries remain.
Transfer the ice cream to a medium loaf pan or other freezer safe container.
Cover the ice cream with plastic wrap and freeze another 2 hours or until solid.
Once frozen solid, you can thaw the ice cream in the refrigerator to make it easier to scoop.
