Ingredients
113.5 ozcan coconut cream, full fat (solid part only) *see note below
1cupthick Greek-style yogurt, plain or vanilla
1cupcherries fresh or frozen, pitted and chopped
1/2cupdark chocolate chopped, or dark chocolate chips
1/4cuphoney or maple syrup
1/4cupprotein or collagen peptides powder
2tablespoonscashew or almond (or any other nut or seed) butter
2teaspoonsvanilla extract
Instructions
Note: Place the can of coconut cream in the fridge or freezer for at least 1-2 hours before making this recipe to allow coconut cream to separate.Open chilled can and scoop out the cream that has separated and set hard on the top and place in a bowl. Save the remaining coconut water to use in a smoothie, drink, or discard.Stir in the yogurt, chopped cherries, chopped chocolate, honey, protein powder and vanilla extract and stir until combined but chunks of cherries remain.Transfer the ice cream to a medium loaf pan or other freezer safe container.Cover the ice cream with plastic wrap and freeze another 2 hours or until solid.Once frozen solid, you can thaw the ice cream in the refrigerator to make it easier to scoop.
