Ingredients

Creamy Protein Base

  • 1 cup cottage cheese
  • 1/2 cup thick Greek-style yogurt (or dairy-free yogurt)
  • 2-3 soft Medjool dates, pitted
  • 1/2 cup vanilla protein powder
  • 1/2 teaspoon vanilla extract
  • Pinch sea salt

Magic Shell Topping

  • 1/2 cup dark chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Add cottage cheese, yogurt, protein powder, vanilla, and salt to a blender.
    Blend until completely smooth and creamy.
    Lastly add the dates and pulse a couple of times to keep them chunky for little bursts of caramel like flavour in every mouthful.
    Spoon mixture into 2 serving jars or cups and smooth the top.

Magic Shell Topping 

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, pour chocolate evenly over each cup.
    Refrigerate for 20–30 minutes until the chocolate hardens into a shell.
    Crack the top with a spoon and enjoy.
    Store covered in the fridge for up to 3 days. Best enjoyed chilled.
