I l.o.v.e. candy. I have the largest sweet tooth, but I also like a little salt to go with my sweetness, which makes this healthy candy recipe perfect! It’s sweet and chocolatey, but also a little bit salty and oh-so-crunchy. YUM!

Cashew butter and chocolate is one of my favorite flavor combinations –these nut clusters are amazingly yummy, crunchy, and perfectly sweetened – yep, even without any added sugar.

If you are looking for one of the simplest and best snack or dessert recipes there is, look no further, because this nut cluster recipe is one of them. The recipe combines cashews and a smooth cashew butter chocolate sauce to form a delicious nutty-crunchy party in your mouth.

Also, on top of all that awesomeness, all you need is just a few minutes, and a few simple ingredients to make them and then you just have to wait for them to harden up in the freezer.

Now, I used cashews to make the nut clusters. But you can actually use any nuts you want or add some seeds too. You can also add raisins, apricots, hemp seeds, dried pineapple, cranberries, whatever you like!

Make your own creation but whatever you put in them, you can bank of it that these nut clusters will be sweet, salty, nutty and crunchy, and incredibly delicious. Everyone who tries them, thinks they are amazing and has no clue they are sugar-free.

Personally, I love using them in place of a protein bar for a low carb snack. But, they also make a great quick breakfast or even dessert! They are also SO good broken up and sprinkled on my oats or smoothie bowl in the morning. They are a handy tool to satisfy my craving for a sweet-savory treat in the afternoon.

They also make standout gifts – box them up with each cluster in its own foil or paper candy cup. You can use festive or different coloured sprinkles depending on the theme eg unicorn or rainbow sprinkles for a little girls birthday party.

Cashew White Chocolate Snacking Clusters

A delicious nutty-crunchy party in your mouth. Bursting with salty ‘n sweet flavors, this nut cluster recipe is one of my favorite easy snacks to make. Simple ingredients and delicious results.

Ingredients

  • 1 cup cashews, or peanuts or a mix, raw or roasted
  • 1/2 cup cashew or almond butter
  • 1 cup chocolate chip, white, milk or dark or a mix
  • 1 tablespoon coconut oil
  • 2 tablespoons sprinkles - optional

Instructions

  • Line a baking sheet or tray with parchment paper or use a silicon baking mat.
    Place chocolate chips, cashew butter and coconut oil in a medium-sized bowl and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and almond butter together.
    Once melted add chopped cashews to the bowl and mix all together until well combined, and the nuts are thoroughly coated in the cashew butter chocolate sauce.
    Scoop out about 1-2 tablespoon-size clusters at a time onto the baking sheet. If you wish to add toppings or sprinkles do so while the chocolate is still wet so they stick.
    Makes around 8-10 clusters, depending on your preferred size and allow to set in fridge. Once cool, store in an airtight container.
    Store leftovers in the refrigerator for up to about 7days. So you can enjoy a cluster every single day during the week!
    Then if you want to keep them for longer, you can store them in an airtight container in the freezer for about 3 months. And when you want to eat one, you can either eat it frozen or let it thaw for a little bit in the fridge to soften up.
