Ingredients
1cupcashews, or peanuts or a mix, raw or roasted
1/2cupcashew or almond butter
1cupchocolate chip, white, milk or dark or a mix
1tablespooncoconut oil
2tablespoonssprinkles - optional
Instructions
Line a baking sheet or tray with parchment paper or use a silicon baking mat.Place chocolate chips, cashew butter and coconut oil in a medium-sized bowl and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and almond butter together.Once melted add chopped cashews to the bowl and mix all together until well combined, and the nuts are thoroughly coated in the cashew butter chocolate sauce.Scoop out about 1-2 tablespoon-size clusters at a time onto the baking sheet. If you wish to add toppings or sprinkles do so while the chocolate is still wet so they stick.Makes around 8-10 clusters, depending on your preferred size and allow to set in fridge. Once cool, store in an airtight container.Store leftovers in the refrigerator for up to about 7days. So you can enjoy a cluster every single day during the week! Then if you want to keep them for longer, you can store them in an airtight container in the freezer for about 3 months. And when you want to eat one, you can either eat it frozen or let it thaw for a little bit in the fridge to soften up.
