Caramel Milky Way Protein Bars (Healthy & No Bake)
Ingredients
Protein Nougat
- 1 cup coconut or almond flour
- 1/2 cup desiccated coconut
- 1/2 cup vanilla protein powder
- 1/4 cup cashew butter
- 1/4 cup honey or maple syrup
- 1/4 cup milk of choice
- 1 teaspoon vanilla extract
Date Caramel
- 1 cup dates, soaked at least 30 minutes and drained
- 1/2 cup coconut milk or cream, full fat
- 1 teaspoon vanilla extract
- Pinch salt
Chocolate Coating
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil
Instructions
Protein Nougat
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Mix all ingredients until smooth. If too dry add a little more milk, a tablespoon at a time until it comes together. Press into the lined loaf tin and spread out evenly with a spatula or back of a spoon.
Date Caramel
- Combine all the ingredients in a food processor and process until smooth and creamy. You can adjust the consistency by adding more coconut milk if it is too thick to pour easily.Spread evenly over the nougat layer. Place in freezer for 1-2 hours to firm up and set. Note: Keep any date caramel left overs in an air-tight container in the fridge for up to 2weeks, ready to dollop on EVERYTHING!
Chocolate Coating
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Remove the bars from freezer and after checking they are firm and set, remove from pan using the parchment paper handles and cut into 8-10 bars or more smaller squares. Place back in freezer while you melt the chocolate coating.Note: Its important the bars are frozen when you go to dip them in chocolate so they stay firm and together and not fall apart.Once chocolate is melted, working quickly, using two forks, dip one bar at a time into the bowl of melted chocolate until it is fully coated. Lift the bar from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining bars.Or hold each bar with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. Sprinkle with flaky salt if desired, then chill until chocolate has set.Put the bars into the freezer for at least 4 hours.Once chocolate is set and crisp, enjoy your homemade Milky Way bars.
