I’ve been making myself these overnight white chocolate oats for years but I do have them at different times of the day to fit in with my gym sessions. They are the perfect post-workout because they are high in fiber, high protein, and so so satisfying.

Overnight oats are one of my favourite breakfasts to prepare as they are super easy, super customizable (so you can get super creative) meaning you will never get bored of them, and they are packed with benefits. Not only are they high protein so they are super satiating but they are also low calorie! Oats are one of the most healthiest grains as:

They are super high in the soluble fiber Beta-Glucan which helps to reduce blood sugar, increase satiation (feeling of fullness), and increase good bacteria in the digestive tract.

They are loaded with important vitamin and minerals, such as manganese, phosphorus, magnesium, copper, iron and zinc.

They are rich in antioxidants, including avenanthramides. Studies have shown that these polyphenol compounds can help reduce blood pressure and provide other important health benefits

Are overnight oats healthy?

I always like to mention that health/healthy depends on your description of it. Is this oat recipe low-calorie? Not specifically. But does it pack a punch of nutrients? Yes, absolutely.

This dish is packed with protein, fiber, omega 3s, probiotics, and antioxidants, and just tastes amazing. Keep in mind that this is for this recipe right here, overnight oats that you will find in store might have a lot more sugar than what you would like to consume in the morning.

Blueberry & White Chocolate Overnight Oats

Ingredients

  • 1/3 cup rolled oats
  • 1 scoop protein or collagen powder
  • 1 teaspoon any sweetener
  • 1/3 cup any milk

Blueberry Layer

  • 1/2 cup blueberries, fresh or frozen

White Chocolate Ganache

  • 1/4 cup white chocolate chips
  • 1/2 cup yogurt
  • 1 tablespoon any milk

Instructions

  • Mix oats, protein, sweetener and milk until nice and creamy, add to a ramekin or bowl of choice.

Blueberry Layer

  • Melt blueberries in microwave for 30 seconds, smash with a fork and add on top of your oat layer
    OR just add blueberries whole on top of your oat layer (or a bit of both).

White Chocolate Ganache

  • To make white chocolate ganache, melt the chocolate in the microwave for 30 second increments until melted, add splash of plant milk and yogurt and mix well until a smooth ganache is formed (might take a few minutes),
    Add on top of blueberries and refrigerate overnight or for a minimum of 6 hours
    Top with a sprinkle of white chocolate shreds (optional).
