Blue Spirulina Protein Snack Balls
Ingredients
- 1 cup coconut butter - store bought or recipe below in notes
- 1/2 cup almond flour
- 1/2 cup desiccated coconut
- 1/4 cup protein or collagen peptides powder
- 2 tablespoons honey or maple syrup
- 2 teaspoons blue spirulina powder
Blue Coconut Coating
- 1/2 cup desiccated coconut
- pinch blue spirulina powder
Instructions
- If you are going to make your own homemade coconut butter, (recipe below in notes) make this first so its ready to go when you want to make the snack balls.Ensure the coconut butter is at a softened consistency by warming it at a gentle heat in a medium sized pot. Once melted, take off the heat and add almond flour, coconut, protein powder, honey and blue spirulina powder to the pot and stir until combined. Only one pot to clean so that’s a good thing!Take tablespoons of the mixture and roll into 12-14 balls then roll in the desiccated coconut Add a dash of blue spirulina powder to the coconut to get that special blue colour on the outside of the balls.
