Ingredients

Sugar Cookie Base

  • 1 1/2 cups almond flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup honey, maple syrup or a powdered sweetener
  • 1/4 cup coconut oil, melted
  • 2-3 tablespoons milk of choice
  • 1 teaspoon vanilla extract

White Chocolate Cream Cheese Frosting

  • 3/4 cup cream cheese, softened (leave out at room temperature for an hour or a 10 second burst in the microwave will do it.)
  • 3/4 cup white chocolate chips, melted and slightly cooled
  • 2 tablespoons vanilla protein powder
  • 1 teaspoon vanilla extract
  • 1/4 cup rainbow sprinkles

Instructions

  • Line an 7×5-inch loaf pan with parchment paper.
    In a bowl, mix almond flour, protein powder, sweetener, and salt.
    Add melted coconut oil, milk, and vanilla extract. Stir until a soft dough forms.
    Press the mixture evenly into the prepared pan. Place in the fridge to firm up while preparing frosting.

White Chocolate Cream Cheese Frosting

  • Beat cream cheese until smooth. Mix in protein powder, melted white chocolate, and vanilla until creamy.
    Spread frosting evenly over the chilled cookie base.
