Sugar Cookie Base
1 1/2cupsalmond flour
1/2cupvanilla protein powder
1/4cuphoney, maple syrup or a powdered sweetener
1/4cupcoconut oil, melted
2-3tablespoonsmilk of choice

White Chocolate Cream Cheese Frosting
3/4cupcream cheese, softened (leave out at room temperature for an hour or a 10 second burst in the microwave will do it.)
3/4cupwhite chocolate chips, melted and slightly cooled
2tablespoonsvanilla protein powder
1teaspoonvanilla extract
1/4cuprainbow sprinkles
Instructions
Line an 7×5-inch loaf pan with parchment paper.In a bowl, mix almond flour, protein powder, sweetener, and salt.Add melted coconut oil, milk, and vanilla extract. Stir until a soft dough forms.Press the mixture evenly into the prepared pan. Place in the fridge to firm up while preparing frosting.
White Chocolate Cream Cheese Frosting
Beat cream cheese until smooth. Mix in protein powder, melted white chocolate, and vanilla until creamy.Spread frosting evenly over the chilled cookie base.Sprinkle with sprinkles. Refrigerate for 1–2 hours, or until set.Slice into 8 bars or more smaller squares.Store in an airtight container in the fridge for up to 1 week or freeze for up to 3 months.
