Birthday cake….and sprinkles. A marriage made in heaven and probably one of the most enjoyable treats that exist! So I figured it was about time to put it into a snack bite.
These birthday cake energy bites are a delicious grab-n-go breakfast or snack! Packed with fiber, healthy fats, and whole-grains, and filled with rainbow sprinkles for a little fun twist
Energy bites tend to hold me over between meals, and I have so many different variations to them. I love stocking my fridge and freezer with some form of energy bite. They are an easy snack to have on hand, so simple to make, and I love to get creative and switch things up from time to time.
These energy bites taste like yummy vanilla cake batter and are studded throughout with sprinkles to make them extra festive. I drizzled melted coconut butter on top for the birthday cake “icing” and added even more sprinkles on top. Fun, right!?
Each little energy bite is like your own personal birthday cake, but totally nutritious. The texture of these balls are amazing. Soft, and easy to eat. You will want to keep them in the fridge as they will get quite soft at room temperature.
They are naturally sweetened with maple syrup and packed with plant-based protein from the almond butter and almond flour. Talk about a birthday win!
Everything is combined in a food processor and then you pulse in the sprinkles, roll into balls and decorate with the icing and more sprinkles. That’s it! You could enjoy right away or store in your freezer or refrigerator.
They are perfect to enjoy throughout your special day or whenever you need a little pick-me-up snack. Or, you can surprise your friend, co-worker or family member with these on their birthday. They make a fun food gift for sure. I know I would appreciate it if someone made these for my b-day. Hint, hint! 😉

Whoever is responsible for the idea that we should mash a bunch of healthy ingredients into one little ball as a snack is an absolute genius in my book. Little spheres of snacking. Little orbs of awesome.
Which is why I knew I needed to find a way to enjoy birthday cake every single day. These energy bites are the perfect balanced snack. They are packed with protein, healthy fat, naturally sweetened and taste just like the classic ‘confetti cake mix’ we all grew up eating on our birthday.
These are great for kids because they are not only loaded with nutrients, but also look tasty, and appetizing with colourful sprinkles!

Birthday Cake Energy Bites
Ingredients
- 1 1/2 cups almonds or walnuts
- 1/2 cup coconut flour
- 1/4 cup almond (or any other nut) butter
- 1/4 cup honey or maple syrup
- 2 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
- 2 tablespoons sprinkles (+ more to garnish)
Coconut Drizzle
- 1/2 cup coconut butter,melted – store bought or recipe below in notes
Instructions
- Add the almonds to a food processor and process until broken down and crumbly. Add coconut flour, honey, almond butter,coconut oil and vanilla and pulse until well combined into a dough like mixture.Add 1-2 tablespoons of sprinkles depending on how much you love sprinkles. One tablespoon was enough for me, but, hey,it's YOUR birthday so you do you! Pulse a couple times to incorporate them throughout the batter.Remove the food processor lid and blade and form into balls. Use a 1½ tablespoon cookie scoop or spoon to portion out the energy bites into 16-18 bites. Roll each between two dry hands to form balls. Set aside on a flat surface lined with parchment paper ready for the coconut drizzle.
Coconut Drizzle
- Place coconut butter in a small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top).Once melted use a fork or spoon to drizzle the melted coconut butter over the top the energy bites. Feel free to use as much as you would like. Add more sprinkles on top (they stick to the coconut butter). Place in your refrigerator or freezer and allow the drizzle to set for 20-30 minutes. You can enjoy these straight out of the refrigerator.
