Berries & Cream Cheese Rice Cakes
Ah, the humble rice cake- often overlooked and underestimated. While not a stand alone nutritional superstar, being essentially puffed rice pressed together, the right toppings can transform it in a far more satisfying (and exciting!) snack.When people think of rice cakes, they often think of being on a diet. They were hailed as the snack time poster child of the low-fat-low-calorie era. The cardboard-esque, snack touted by dieters as long for as you can remember. However, and despite dietary recommendations thankfully evolving, we are still somewhat hard-wired into this mindset. But there’s more to these light and crispy snacks. They were (and still are) thought of as being bland and leaving people hungry and unsatisfied. But they do not have to be! So… what to top them with? Nut butters and cream cheese are my faves. The crunchy base lends itself perfectly to a variety of toppings that add flavor and nutrition and can serve as a convenient and versatile, hand-to-mouth vehicle for other nutrient-dense ingredients. Create a decadent topping like this recipe and dress these bad boys up!Now you can satisfy your sweet tooth with this delicious rice cake layered with cream cheese, lightened up with yogurt and topped with fresh berries. This recipe is a delightful healthy snack for kids and adults. It's also endlessly customizable. Add your own favourite toppings as well and make it your own.

Ingredients
- 2 rice cakes
- 3 tablespoons cream cheese, softened
- 2 tablespoons plain Greek yogurt
- 1-2 teaspoons honey or maple syrup
- 1 teaspoon protein or collagen powder
- 1/2 teaspoon vanilla extract
- 1/3 cup sliced fresh berries
- Hemp seeds for garnish
Instructions
- In a small mixing bowl, mix together the softened cream cheese, honey, protein powder/collagen and vanilla until smooth and combined. Taste and add more sweetener or vanilla as needed. Spread in an even layer on each rice cake.Top each rice cake evenly with berries of choice. Drizzle with more honey and top with a pinch of hempseeds.
