Berries & Cream Cheese Rice Cakes
Ah, the humble rice cake- often overlooked and underestimated. While not a stand alone nutritional superstar, being essentially puffed rice pressed together, the right toppings can transform it in a far more satisfying (and exciting!) snack.When people think of rice cakes, they often think of being on a diet. Ingredients
- 2 rice cakes
- 3 tablespoons cream cheese, softened
- 2 tablespoons plain Greek yogurt
- 1-2 teaspoons honey or maple syrup
- 1 teaspoon protein or collagen powder
- 1/2 teaspoon vanilla extract
- 1/3 cup sliced fresh berries
- Hemp seeds for garnish
Instructions
- In a small mixing bowl, mix together the softened cream cheese, honey, protein powder/collagen and vanilla until smooth and combined. Taste and add more sweetener or vanilla as needed. Spread in an even layer on each rice cake.Top each rice cake evenly with berries of choice. Drizzle with more honey and top with a pinch of hempseeds.
