That’s why I prefer making my own healthier version at home with more wholesome ingredients. This recipe is a fun twist to classic ice cream where the main ingredient is banana and makes this the creamiest texture!

Nice cream is a term that has come and yogurt to represent any frozen creamy treat free from loads of sugar and artificial flavors.  It’s also really easy to make. As I don’t have an ice cream maker, knowing I can blend a few basic ingredients in a blender and freeze for an hour works perfectly for me! You simply blitz frozen fruit (like bananas) in a food processor and the end result is a whole-food ice cream that is rich, creamy, and luscious enough for a special occasion yet light and easy enough for an any time indulgence.

It’s called ‘nice cream’ rather than ice cream, just to differentiate the two. Nice cream is a super easy, take on traditional ice cream, yet made very differently. It sounds too good to be true doesn’t it? Ice-cream just out of bananas. It tastes like ice-cream and it is so damn good! This is definitely one for the recipe bible.

Banana Almond Coconut Protein Nice Cream

This simple recipe is perfect for those days when you crave a refreshing dessert or snack. To make this ice cream, ripe bananas are blended with almond butter which adds a nutty twist, while coconut cream transforms it into a creamy indulgence. Ingredients

  • 2-3 bananas, sliced, frozen
  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1/2 cup dates or raisins, soaked 30 minutes and drained
  • 1/4 cup protein or collagen peptides powder
  • 2 tablespoons almond or cashew butter
  • 1 teaspoon vanilla extract

Optional Mix-Ins Or Toppings

  • Chopped nuts
  • Fresh, dried or freeze-dried fruit
  • Chocolate chips
  • Granola
  • Hemp seeds
  • Shredded coconut

Instructions

  • Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making this recipe to allow the coconut cream to separate.
    When ready to make the nice cream, open chilled can and scoop out the hardened cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.
    Place in the food processor with all other ingredients and process until smooth and creamy.
    Serve immediately as a soft serve or place in a bowl or dish in the freezer for 1-2 hours for firmer texture. If fully frozen, thaw for 10 minutes, scoop and enjoy!
