This is my new fav snack!! No baking! No gluten! No dairy! No refined sugar! And yet these babies are SO rich and fudge-y and taste like a total treat! They are super easy to make in minutes, with only a handful of ingredients for a healthy treat that will satisfy your cravings without the guilt.

Everyone will enjoy these no-bake goodies after dinner or as a healthy snack.

There is no secret that I love snacking. Life can get a little crazy and it helps to have healthy snacks on hand when there is just no time to whip up a batch of your favorite hummus or smoothie! There is a time and a place for all snacks, but when it comes to an easy grab-n-go snack that is also delicious, you can’t beat an ENERGY BALL

It is no secret that we have been obsessed with energy balls since the beginning of time. They were one of the first no bake treats that I fell head over heels in love with. And? So did you! People discovered the greatness of these energy balls of heaven and the rest is history.

After all, whoever is responsible for the idea that we should mash a bunch of healthy ingredients into one little ball as a snack is an absolute genius in my book. Little spheres of snacking awesomeness.

Why should I make protein/energy balls? Is that even a question? Let me count the ways!

Protein/energy balls are naturally sweetened Generally, we make protein/energy balls with dates and other dried fruits. So, no refined sugar necessary! No oven? No problem! All of my energy balls are no bake snacks! All you have to do is throw your ingredients into a food processor, blend, add some moisture, and BOOM.

They are BEST meal prep snack around town! Having healthy snacks available during the week is a good way to make sure that you snack smart. Try making an extra batch of healthy energy balls and store them in the freezer!

The idea is when you snack smart, you are less likely to grab something unhealthy when you are full on craving a ‘lil something’.

On-the-Go Snackin’. Is there anything better than having a grab-n-go snack when you are having a busy morning? Or maybe you have kids that need to constantly be eating! Throw an energy/protein ball their way. I promise it will tide them over until dinner!

Almond Date Protein Bites: The Perfect Snack

These Almond Date Protein Bites are the easiest snack to make. A yummy take on a classic. Loaded with almonds and dates, all rolled in coconut. Zero baking needed - just blitz, shape, chill, and eat. Plus, they are refined sugar-free, packed with 8.5 grams of protein per serving for an easy grab-and-go protein treat.

Ingredients

  • 1 cup dates, soaked 30 minutes and drained
  • 1 cup almonds or walnuts
  • 1/2 cup almond butter or peanut butter
  • 1/2 cup desiccated coconut
  • 1/4 cup cocoa powder
  • 1/4 cup protein or collagen peptides powder
  • 1 teaspoon vanilla extract

Coating

  • 1/2 cup more desiccated coconut to roll the bites in

Instructions

  • In a food processor add dates, almonds, almond butter, coconut, cocoa powder, protein powder and vanilla extract until a thick dough is formed.
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your protein bites.
    Line a small tray or dish with parchment paper.
    Place the ½ cup coconut in a small dish ready to roll the balls in as you form them.
    Using a tablespoon or small cookie scoop, roll 10-12 small balls and roll each ball in coconut and place on a baking sheet. Repeat until dough is gone.
    Place balls in freezer for at least an hour to become firm.
    Store in the fridge for up to 5-6 days in an airtight container or 1 month in the freezer in freezer bags.
