Ingredients
1cupdates, soaked 30 minutes and drained
1cupalmonds or walnuts
1/2cupalmond butter or peanut butter
1/2cupdesiccated coconut
1/4cupcocoa powder
1/4cupprotein or collagen peptides powder
1teaspoonvanilla extract

1/2cupmore desiccated coconut to roll the bites in
Instructions
In a food processor add dates, almonds, almond butter, coconut, cocoa powder, protein powder and vanilla extract until a thick dough is formed. Be careful not to over process as its nice to have texture variance and different sized “bits” in your protein bites.Line a small tray or dish with parchment paper.Place the ½ cup coconut in a small dish ready to roll the balls in as you form them.Using a tablespoon or small cookie scoop, roll 10-12 small balls and roll each ball in coconut and place on a baking sheet. Repeat until dough is gone.Place balls in freezer for at least an hour to become firm.Store in the fridge for up to 5-6 days in an airtight container or 1 month in the freezer in freezer bags.
