Ingredients

  • 1 cup dates, soaked 30 minutes and drained
  • 1 cup almonds or walnuts
  • 1/2 cup almond butter or peanut butter
  • 1/2 cup desiccated coconut
  • 1/4 cup cocoa powder
  • 1/4 cup protein or collagen peptides powder
  • 1 teaspoon vanilla extract

Coating

  • 1/2 cup more desiccated coconut to roll the bites in

Instructions

  • In a food processor add dates, almonds, almond butter, coconut, cocoa powder, protein powder and vanilla extract until a thick dough is formed.
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your protein bites.
    Line a small tray or dish with parchment paper.
    Place the ½ cup coconut in a small dish ready to roll the balls in as you form them.
    Using a tablespoon or small cookie scoop, roll 10-12 small balls and roll each ball in coconut and place on a baking sheet. Repeat until dough is gone.
    Place balls in freezer for at least an hour to become firm.
    Store in the fridge for up to 5-6 days in an airtight container or 1 month in the freezer in freezer bags.
