Almond Blueberry Chocolate Bark

Try this antioxidant-rich sweet treat next time a chocolate craving hits. Made with just four simple ingredients, this recipe is low in added sugar and rich in beneficial nutrients.
Blueberries provide fiber and disease-fighting phytonutrients including anthocyanins and flavonoids, which have been linked to improved heart and brain health.
Almonds add satisfying healthy fats, protein, and crunchy texture, and dark chocolate provides key minerals like magnesium and iron.
I love how amazing new food trends are being created on internet websites like TikTok and some of them go viral and get loads of attention.
One of them that is making a huge buzz is around what is called “bark” - layers of yummy foods placed in flat layers on top of each other then frozen. Once frozen the “bark” it is broken or cut into squares.
The bottom layer is usually something that can be sliced in flat pieces like chocolate, cottage cheese, banana slices, strawberry slices or even dates. Then layers of yummy things like dried fruit, nuts, seeds, nut butter and coconut is added to create a simple and healthy dessert or snack.
I have tried a few of these recipes recently and they do not disappoint. Its not every day that a food trend exceeds my expectations,but this viral white chocolate bark is definitely a winner.
Dark chocolate bark is the unexpected dessert you will love making and eating! If you cannot get fresh fruit you can always use dried fruit (always in season!)
This healthy treat is so yummy I found myself reaching for small bite after small bite it was just so more-ish.
Bark is pretty much the easiest sweet treat you can possibly make. Endless flavor possibilities, 2-3 ingredients, 5 minutes to put together and 30 minutes to chill. It’s hard to even call this a recipe. In fact, there are really no measurements needed.
You can swap out the dried fruit and nuts for whatever fits the occasion or you have on hand. Truth be told, it’s a great way to use up those last little bits in your cupboard!
I will warn you, however, that this dark (or white or milk) chocolate bark is addictive.  The little pieces just never seem to quite satisfy my cravings but you might have more will power than me!
You could make different batches with your favourite flavour combinations. I highly recommend candied ginger if you have it. I’m going to add it to the next batch because I have some pantry stocking to do….
Chocolate bark is the easiest treat to make. Just melt,mix, spread and you are done! Plus, it makes a great gift!

Ingredients

  • 2 cups fresh blueberries
  • 1 1/2 cups dark chocolate chips
  • 1 cup roasted and salted almonds, chopped
  • 1 tablespoon coconut oil
  • Optional: flaked sea salt, for topping 

Instructions

  • Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bark out easier for cutting.
    Add blueberries to the dish and spread them out into an even layer.
    Sprinkle chopped almonds onto the blueberries.
    Melt the chocolate - Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Pour melted chocolate over blueberries and almonds. Try to pour the chocolate on in an even layer and cover as much of the blueberries and almonds as possible. If some of the blueberries remain uncovered, use a rubber spatula or back of a spoon to spread out the chocolate as needed.
    Place the dark chocolate blueberry bark in the freezer to set for at an hour or more. Remove and break the bark into pieces. Store in an airtight container in the freezer.
