Almond Birthday Cake Protein Bars

No-Bake. Soft & Chewy. Protein-Packed Celebration Bars

Who says birthday cake is only for birthdays?

These Almond Birthday Cake Protein Bars are proof that you can have that classic vanilla cake flavour  – complete with sweet almond notes and colourful sprinkles – in a nourishing, protein-packed, no-bake form you can enjoy anytime.

They are soft, chewy, lightly sweet, and taste just like cake batter… but made with wholesome ingredients that fuel your body instead of leaving you in a sugar crash.

At Blended Bites, we love transforming nostalgic flavours into feel-good snacks. And this one might just be the most fun of them all.

That Classic Birthday Cake Flavour – Reinvented

The magic of birthday cake flavour comes from two things: vanilla and almond extract. That subtle almond note is what gives traditional cake its unmistakable bakery-style taste. In these bars, it elevates the vanilla protein base and instantly creates that celebratory flavour we all know and love.

Almond flour forms the soft, tender base of these bars, giving them a natural sweetness and a melt-in-your-mouth texture. Combined with vanilla protein powder, a touch of maple syrup, and creamy almond butter, the result is a dough that tastes dangerously close to cake batter.

And of course – sprinkles. Because what is birthday cake without them?

They add colour, fun, and that nostalgic joy factor that makes these bars feel like a treat, even though they are packed with protein and healthy fats.

Why You Will Love These Bars

No baking required
Naturally sweetened
Gluten-free
Protein-rich and satisfying
Perfect for meal prep
Freezer-friendly

They are ideal as a post-workout snack, afternoon pick-me-up, or healthy dessert alternative. Keep them in the fridge for a soft, chewy texture, or in the freezer for a firmer bite.

And yes – they are absolutely kid-approved.

A Treat That Fuels You

Unlike traditional birthday cake loaded with refined sugar and flour, these bars balance indulgence with nourishment. The almond flour and almond butter provide healthy fats to keep you satisfied, while protein powder adds staying power so you are not hungry an hour later.

They feel celebratory – but they are practical. Which means you don’t need a special occasion to make them.

Just a craving. ✨

Ingredients

  • 1 1/2 cups almond flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup almond butter
  • 2-3 tablespoons maple syrup or honey
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2-3 tablespoons almond milk (or any milk as needed)
  • 2 tablespoons natural sprinkles

Optional Frosting Layer

  • 1/4 cup Greek yoghurt or coconut yoghurt
  • 2 tablespoons vanilla protein powder
  • 1 tablespoon maple syrup
  • Extra sprinkles for topping

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
In a mixing bowl, combine almond flour and protein powder.
Add almond butter, maple syrup, melted coconut oil, vanilla extract, and almond extract. Mix until a thick dough forms.
Add almond milk 1 tablespoon at a time if needed to bring the mixture together.
    Fold through sprinkles gently.
Press the mixture into the prepared tin and smooth the top.
If adding frosting, mix yoghurt, protein powder and maple syrup until smooth. Spread evenly over the bars and top with extra sprinkles.
Chill in the fridge for at least 1–2 hours (or freeze for 30–45 minutes) until firm.
Slice into 8-10 bars or more smaller squares and store in an airtight container in the fridge for up to 1 week or freezer for up to 3 months.
