Ingredients
Banana Cloud Filling
- 2 ripe bananas
- 1 1/2 cups thick Greek yogurt
- 1/2 cup chocolate or vanilla protein powder
- 3 tablespoons cocoa powder
- 2 tablespoons natural peanut butter or almond butter
- 1-2 tablespoons maple syrup or honey, optional
- 1 teaspoon vanilla extract
- Pinch of sea salt
- 2-4 tablespoons milk of choice, as needed
Chocolate Coating
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil
Optional Toppings
- Banana slices
- Cacao nibs
- Chopped peanuts or almonds
- Desiccated coconut
- Flaky sea salt
Instructions
- Place the bananas, Greek yogurt, protein powder, cocoa powder, nut butter, vanilla, and sea salt into a high-speed blender or food processor.Blend until completely smooth and creamy.Taste and add maple syrup or honey if you prefer a sweeter dessert.Add milk one tablespoon at a time if needed to help everything blend smoothly. Don't add too much - the mixture should remain thick and creamy.
Chocolate Coating
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, coat silicone 10 -12 muffin cups or small dessert cups with a thin chocolate layer and freeze for 10–15 minutes.Fill with the banana-yogurt mixture, then cover with more chocolate.Add your favorite toppings before the chocolate sets.Refrigerate for1–2 hours until chilled and firm.Alternatively,freeze for 30–60 minutes for a firmer, ice-cream-like texture, then let the cups sit for 3–5 minutes before serving.Crack the chocolate shell to reveal the creamy banana cloud inside! Store the cups in an airtight container in the refrigerator for up to 4 days. They can also be frozen for up to 1 month.
